Dunc’s Dark Maple Rum
As opposed to our classic Maple Rum, for this specialty product we set aside our pure VT Maple Syrup to age and ferment. This process allows for a changing of flavor, resulting in a wonderful robust and rich maple flavor, significantly fuller bodied and viscous on the palate. Best served neat or on ice as an after-dinner sipping spirit, but you can find some creative cocktail concoctions below!

Sweater Weather
1 oz Dunc’s Dark Maple Rum
1 oz Backwoods Reserve Rum
.75 oz fresh lemon juice
.75 oz rosemary syrup
Combine all ingredients together into a cocktail shaker with ice and shake until chilled. For the full effect of the drink, lightly torch a rosemary sprig and keep your glass upside down over it while you build your cocktail.
Rosemary syrup: In a saucepan, combine equal parts cane sugar and water until dissolved. Add 5-6 rosemary sprigs and simmer for a few minutes. Remove from heat and let steep for 20 minutes. Keep any excess syrup refrigerated until you make your next drink!
Slam Dunc
2 oz Dunc’s Dark Maple Rum
4 oz Ginger Beer
.5 oz fresh lime juice
Combine all ingredients together into a highball glass with ice and stir until well mixed. Garnish with a lime wheel and enjoy!
Maple Rumhattan
1.25 oz Backwoods Reserve Rum
.5 oz Dunc’s Dark Maple Rum
.25 sweet vermouth
Combine all ingredients together into a mixing glass and stir with ice until well chilled and diluted. Strain into a separate rocks glass over a large ice cube and garnish with a brandied or Luxardo cherry.
